An American Artisan: The Scharffen Berger Chocolate Maker Story

America's first contemporary artisan chocolate manufacturer, SCHARFFEN BERGER Chocolate Maker set out to craft the richest, most flavorful chocolate by sourcing the best cacao in the world and blending it in small batches using vintage equipment.

SCHARFFEN BERGER Chocolate Maker was founded in 1997 by chocolate connoisseur Robert Steinberg and winemaker John Scharffenberger. The pair tested multiple combinations before perfecting a unique blend that highlighted the true flavor of cacao instead of masking it with sugar and other flavors. The result is an array of truly distinctive chocolates with balance and complexity — not unlike those found in exceptional wines.

As the first American "bean-to-bar" chocolate manufacturer in over 50 years, SCHARFFEN BERGER Chocolate Maker led this country's contemporary resurgence in artisan chocolate-making. It was also the first chocolate maker to label their chocolate with the percentage of cacao inside.

Stack of Scharffenberger chocolate

Today, SCHARFFEN BERGER Chocolate Maker travels the world to source the finest cacao. We select the best beans from small sustainable farms in fabled cacao-producing countries: Madagascar, Indonesia, Trinidad, Venezuela, Brazil, Guatemala, Vietnam, Grenada, Paupua New Guinea, Bali, Ghana and Peru. Of the more than 150 samples we taste each year, only a select few are chosen to become SCHARFFEN BERGER Chocolate. Beans from each region are picked for their unique flavor characteristics, and our roasting parameters are specially developed for each origin to bring out the best in each flavor. We blend these freshly roasted beans to produce our signature flavors, balanced and complex, highlighting the true, rich flavors of cacao.

This artisan process, honed with a wine-maker's attention to craftsmanship, results in the richest, most flavorful chocolate you've ever tasted.

4.0 out of 5 stars Well, S&B Milk Chocolate is good but not great, December 12, 2010

I have read the other two reviews and I am baffled as to why I am just not crazy about these chocolates. Am I missing something? I guess my biggest con is that I find the chocolate bar very hard textured and it doesn't melt in my mouth very easily. I am more used to the swiss style chocolate (Milka and Lindt) that quickly begins to melt as soon as it hits your mouth coating everything in luscious chocolate. With these bars chewing is required (reminds me of munching on chocolate chips). The flavor is excellent with a clean chocolate taste and I love the high cacao content which explains the clean taste. I guess I expected more and while they are very good I will pass on these in the future.

Deliciously smooth, not cloyingly sweet, just wonderful pure milk chocolate. Like one of the other reviewer noted, the only downside of these bars is that you'll find yourself eating them in one sitting... and gah, at nearly 500 calories, that's a bit painful. Still worth it, though :p

We bought this chocolate last year when they had the big sale on it here on Amazon. It was just great. Scharffenberger milk chocolate has a deep rich flavor with a great snap and the texture is very smooth.

This latest batch of "Scharffenberger Milk Chocolate" is obviously Hersheys attempt to make it more profitable by removing any value from it. It is lighter in color with a slightly chalky and waxy texture, it is barely creamy and the texture and flavor are not remotely as good as the actual Scharffenberger used to be.

It is much more a third rate Swiss style chocolate and completely lacks the straight forward high quality chocolate flavor that real Scharffenberger had. And if you want Swiss style chocolate you are much better off buying Lindt or Tobler than this over priced and very poor imitation.

This is not nearly as good as the original bar. It seemed obvious that Hershey's would eventually abandon Scharffenbergers high standards, quality... Read more
